Jessica Mentis is a New Zealand artist and the founder of Mentis Studios, a studio linking her two biggest passions: architecture and food. She aims to approach food and flavour-based experiences from an architectural standpoint, using technology and processes usually used to design objects and buildings. From the mix of these two powers is born The Jellyologist, her Instagram account and current work that basically creates architectural desserts using edible jellies. Her geometric desserts can be ordered for parties and catering. The greatest adventure is what she is doing on Instagram, sharing every day a new creation: each jelly is made with a custom mold developed with the 3D printer, and the recipes are often based on cocktails. Every liquid things can become jelly.”
