Jessica<\/span> Mentis<\/span> is<\/span> a<\/span> New Zealand artist<\/span> and the founder of<\/span><\/span> Mentis Studios<\/span>,<\/a><\/span><\/span> a studio linking<\/span> her two<\/span> biggest passions<\/span>: architecture and<\/span> food<\/span>. She aims to approach food and flavour-based experiences from an architectural standpoint, using technology and processes usually used to design objects and buildings. <\/span>From the mix of<\/span> these two powers<\/span> is<\/span> born<\/span> The<\/span> Jellyologist<\/span><\/a><\/span>,<\/a><\/span> her Instagram account<\/span> and<\/span> current<\/span> work<\/span> that<\/span> basically<\/span> creates<\/span> architectural<\/span> desserts<\/span> using<\/span> edible<\/span> jellies<\/span>. Her <\/span>geometric<\/span> desserts can be ordered<\/span> for parties and<\/span> catering<\/span>. The<\/span> greatest adventure<\/span> is<\/span> what<\/span> she is doing<\/span> on Instagram<\/span>, sharing every day<\/span> a new creation<\/span>: each<\/span> jelly<\/span> is<\/span> made with a\u00a0<\/span>custom mold developed<\/span> with<\/span> the 3D printer<\/span>, and<\/span> the recipes<\/span> are often based on<\/span> cocktails.<\/span> “<\/span>Every liquid things <\/span>can become<\/span> jelly<\/span>.” <\/span><\/p>\n
